My White Bean Chicken Chili Recipe

  1. cook the diced chicken breasts in a few tablespoons of canola and the taco seasoning packet. set aside.
  2. saute the onions and green chilies in the leftover oil (plus a tablespoon extra) in the same pot and add spices to taste. (do not be stingy with the salt)
  3. once they are browned/softened add the drained beans along with the cream and chicken. bring that to a simmer for 15-20 minutes. then add a little less than a cup of water to dilute the cream
  4. let boil for another few minutes to thicken and serve with cilantro and avocado.
