My White Bean Chicken Chili Recipe
Ingredients
- 2 onions, diced
- canned green chilies
- canola oil
- 6 chicken breasts
- taco seasoning
- 3 cans white beans
- 1 can pinto beans
- 2 cups cream
- salt, pepper, oregano, bay leaves, cumin, and chili powder
Directions
- cook the diced chicken breasts in a few tablespoons of canola and the taco seasoning packet. set aside.
- saute the onions and green chilies in the leftover oil (plus a tablespoon extra) in the same pot and add spices to taste. (do not be stingy with the salt)
- once they are browned/softened add the drained beans along with the cream and chicken. bring that to a simmer for 15-20 minutes. then add a little less than a
cup of water to dilute the cream
- let boil for another few minutes to thicken and serve with cilantro and avocado.
